Spinach & Strawberry Salad

  • Two cups whole strawberries
  • 1/3 cup white wine vinegar
  • Two T orange juice
  • Two tsp. extra-virgin olive oil
  • One tsp. sugar
  • One tsp. Dijon mustard
  • 1/4 tsp. salt
  • 1/8 tsp. freshly ground black pepper
  • Six cups torn spinach
  • Two cups quartered strawberries
  • 1/4 cups (one oz.) crumbled feta cheese

Place first eight ingredients in a blender or food processor, process until smooth. Place two T dressing, spinach in large bowl, toss gently to coat. Put about 1.25 cup spinach mixture on four plates, and top with quartered strawberries and feta cheese. Drizzle with dressing.
