½ cup plain bread crumbs (unseasoned)
3 tablespoons Parmesan cheese
1 teaspoon Italian seasoning
½ teaspoon garlic powder
1 pound boneless, skinless chicken breasts
1 egg, beaten
1 cup tomato sauce *
¾ cup part-skim mozzarella cheese, shredded
Preheat oven to 375 degrees F. Combine the bread crumbs, Parmesan cheese, Italian seasoning and garlic powder in a shallow bowl. Dip each chicken breast in the beaten egg, and then roll in the bread crumb mixture.
Place chicken on a cookie sheet. Bake for 10 minutes. Turn the chicken over and bake another 10 minutes.
Spoon tomato sauce over chicken. Sprinkle cheese over the top. Bake for about 3 minutes until the cheese is melted.
Serve with your favorite steamed vegetables or a salad.
