(Recipe) Chocolate Bran Muffins

Bran – the outer layer of oats, wheat and other grains – is a nutritional powerhouse with a host of health benefits. Not only is bran a great source of insoluble dietary fiber – the kind that keeps you feeling full for hours – it’s also a pro-biotic with natural antibacterial properties. No wonder bran keeps your GI (gastrointestinal) tract running smoothly.

And there’s more to love: bran reduces your risk for heart disease, can help with weight loss (because you feel full, you snack less) and tastes great. These chocolate bran muffins, with a heavenly brownie taste, prove just how delicious bran can be.

Recipe: Chocolate Bran Muffins
Makes 24 muffins

3 cups of All Bran or Fiber One Cereal
2 ½ cups of warm water
1 box of low fat brownie mix
1 Tbsp. baking powder


1. Mix the water and the cereal together and let sit for about two minutes. Add the brownie mix and baking powder. Mix as indicated on the brownie package

2. Spray cupcake tins with nonstick spray or line with muffin cups. Fill muffin cups 2/3rds full or into 24 muffins. Bake at 350 degrees for 20-25 minutes

(Note: Allow to cool before slicing and serving)
