Mashed potatoes are one of the great comfort foods.
Here’s a slightly grown-up version that’s quick and easy — but has all the flavor you could want and fewer calories than you might expect.
Recipe: Garlic Mashed Potatoes
Yield: 4 servings
1 1/3 pound potatoes (about 4 medium)
1 cup 1% milk
1 Tablespoon margarine
3 cloves garlic, minced
1 teaspoons sea salt
Pepper to taste
Chopped parsley for garnish
Wash potatoes well using a scrubbing device.
Pierce potatoes with fork. Microwave on high for 13 minutes
Cut each potato into 1 inch cubes and place into a medium microwave-safe bowl. Mash with potato masher or beat with an electric mixer.
In a small microwave-safe bowl, combine milk, margarine and garlic. Microwave on high 2 minutes.
Add liquid to potato pulp.
Season with salt and pepper. Microwave on high 1 minute.
Sprinkle with parsley and serve.
