(Recipe) Grilled Zucchini with Sea Salt

Summer is zucchini season! Gardens are overflowing with this delicious vegetable, which is in its peak of tastiness in June, July and August. Don’t have a green thumb? Do what I do and head to the farmer’s market!

This low-calorie vegetable is rich in vitamin C, an antioxidant and immune system booster. It also contains potassium, a mineral that helps your muscles and nerves work properly.

Zucchini is a great addition to salads or alternative to pasta (called “zoodles”!). But have you ever thought about firing up the grill for this vegetable? Give it a try with this simple recipe.

Recipe: Grilled Zucchini with Sea Salt

Yield: 4 servings

Ingredients

1 Tablespoon olive oil

2 medium zucchini — cut diagonally into ½” slices

Sea salt, to taste

Freshly ground black pepper, to taste

Directions

Heat your grill on high, or preheat your indoor electric grill.

Toss oil and zucchini together. Place on the grill. On the outdoor grill, 2 minutes per side. On an indoor grill, 2 – 3 minutes total.

Season to taste with sea salt and pepper.

Serve immediately and enjoy!
