(Recipe) Slow Cooker Mexican Chicken

Here’s a tasty dish that spices up chicken — a good choice for heart health. Chicken is lower in cholesterol and saturated fat than most red meats.

Throw the ingredients in the slow cooker in the morning. Have dinner ready when you get home!

3-4 raw chicken breasts

1 large jar of salsa, place half under the chicken breasts, half on top

1 can of rinsed black beans

1 cup frozen corn

6 green onions – chopped

1 jalapeno – chopped finely

1 small can of green chilies


Put all your ingredients in the slow cooker. Cook for 5 or more hours on low.


Serving Suggestion

  1. Steam cauliflower rice in microwave for 5 minutes. Pat out excess water.
  2. Place 1 cup cauliflower rice on a plate
  3. Take one chicken breast out of slow cooker and place on top of cauliflower rice
  4. Add a little cheese on top of the chicken breast
  5. With a slotted spoon, place the sauce from the slow cooker on top of the cheese
  6. Add fresh chopped cilantro to the top
  7. Add avocado slices to the top
