Ingredients
2 ounces of pumpkin seeds
1 dash kosher salt
1 dash black pepper
1/4 teaspoon chili powder
2 ounces of olive oil
1/2 ounce of lemon juice
1/2 ounce of lime juice
1 pound of watermelon, peeled and cubed
1/2 cup of thinly sliced red onion
4 cups of mixed greens spring mix
10 ounces low fat mozzarella cheese shredded
Directions
1. Fry seeds (dry with no oil) adding a pinch of salt and chili powder until the seeds begin to pop. Allow to cool.
2. Wisk together lemon, oil, black pepper and remaining salt.
3. Toss with watermelon, onion, greens and seeds. Arrange on plate.
4. Top with mozzarella cheese. Serve immediately
