(Recipe) Watermelon Salad with Low-Fat Mozzarella Cheese and Pumpkin Seeds

Nothing says summer more deliciously than freshly sliced watermelon. Team up this favorite refreshing fruit with mixed greens, mozzarella cheese and protein-rich pumpkin seeds to make a yummy addition to your next cookout.

What really sets this recipe apart is the simple, light citrus vinaigrette. And the fact you can whip up this wholesome salad quickly (with little mess) makes it a must-try the next time you get together with family and friends.

(Recipe) Watermelon Salad With Low-Fat Mozzarella Cheese and Pumpkin Seeds

Makes 4 servings

2 ounces of pumpkin seeds
1 dash kosher salt
1 dash black pepper
1/4 teaspoon chili powder
2 ounces of olive oil
1/2 ounce of lemon juice
1/2 ounce of lime juice
1 pound of watermelon, peeled and cubed
1/2 cup of thinly sliced red onion
4 cups of mixed greens spring mix
10 ounces low fat mozzarella cheese shredded

1. Fry seeds (dry with no oil) adding a pinch of salt and chili powder until the seeds begin to pop. Allow to cool.
2. Wisk together lemon, oil, black pepper and remaining salt.
3. Toss with watermelon, onion, greens and seeds. Arrange on plate.
4. Top with mozzarella cheese. Serve immediately
